The lotus root grows under water, and is between 12 and 30 centimeters long and with a diameter of between 5 and 10 centimeters. It has a yellow to pink skin, with a white root. Inside the root are holes. The taste of the root is sweet with a firm texture. Can be fried, steamed or put in soups / stews.
